Job Title: Cook II, 2 positions available (one position at 40 hours/wk, five days a week and one position at 32 hours/wk, three to four days a week)

Work Hours and Pay: one position at 40 hours/wk, five days a week and one position at 32 hours/wk, three to four days a week, both are DOE

Reports to: Project Manager

Job Summary: To ensure high-quality, cost-effective food services and safety to our clients. Assists the Project Manager, and will be considered a back-up as a food safety manager. Responsible for meal-planning, food-preparation, purchasing, inventory, daily paperwork, safety, general sanitation of the kitchen, cleanliness and organization and supervision of staff.

Required Qualifications & Essential Functions:

  • Education and/or Experience: High School Diploma/GED or technical experience successfully cooking for groups of 30 or more; two (2) years supervisory experience. ServSafe Certified; Alaska Food Handlers Card; baking experience preferred, and waste management experience.
  • Experience in Alaska Native Corporations preferred but not required.
  • Must be able to pass a pre-employment drug screen and background check
  • Mathematical Skills: Ability to add, subtract, multiply, and divide using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
  • Language Skills: Ability to read and interpret documents such as safety plans, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.
  • Computer Skills: To perform the job successfully, an individual must be willing to be trained in other computer programs.
  • Other Skills and Abilities: Knowledge in the operation of commercial mixers, fryers, and other commercial kitchen equipment a must.
  • Prepare breakfast, lunches, dinners that are healthy and creative with attention to quality.
  • Maintain a clean and sanitary kitchen, includes "cleaning as you go" and may include washing your own dishes.
  • Maintain a clean and sanitary personal appearance including good personal hygiene, grooming and hand washing habits.
  • Minimize costs; maximize savings which include efficiency in portion control. Must be willing to assist and direct staff to comply with portion control.
  • Conduct weekly inventory of all perishable food items- in stock- pantry, coolers and freezer.
  • Conduct weekly inventory of all non-perishable dry goods and housekeeping supplies.
  • Ensure that all food items in pantry, coolers and freezers are organized by group, "faced" and rotated.
  • Order groceries, cleaning supplies and other needed items- on a weekly basis.
  • Ensure that Material Safety Data Sheets (MSDS) are present and up-to-date for all cleaning supplies and chemicals that are being used.
  • Deep clean the fryer, oven and range hood once a rotation; leave the kitchen clean at end of each day.
  • Monitor, supervise, and assist the daily activities of the kitchen staff to ensure all tasks are completed in a timely manner with attention to detail and overall quality of end result.
  • Maintain current status with all certifications and training.
  • Assist in the unloading and unpacking of the weekly freight delivery.
  • Build and maintain good public-relations with the clients, residents and co-workers.
  • Fax, file and copy as needed.
  • Following the menu provided, and if changes are necessary discussions need to be approved.
  • Tracking all food and supply shipments and coordinating with the Anchorage office for any claims.
  • Tracking and maintaining a cost effective food budget and working with vendors for the best available food and supply pricing is being met.
  • Other duties assigned.
